Job Description:

Area of Responsibility:
•  Assisting the Head Distiller in all aspects of spirits production, including milling, mashing, fermentation, distillation, barreling, barrel management, and blending and bottling;
•  Assisting the Head Distiller in new product formulation and development;
•  Equipment maintenance and upkeep; ensure cleanliness in production areas and through the distillery complex;
•  Receiving orders and stocking and refilling supplies and materials;
•  Logging and record keeping to ensure product consistency and TTB compliance
•  Providing ongoing process optimization and production efficiency feedback;
•  Representing the distillery to the public through tours and tastings. Comfortable with professional interaction with public and private guests;
•  Maintaining strict oversight of quality controls and product excellence Occasional facilities management duties (light repairs, maintenance, and upkeep) to support the smooth running of the distillery;
•  Monitoring fermentations;
•  Assist in managing still operations:
o Stripping runs;
o Spirit runs;
•  Spirit proofing, blending and filtering;
•  Barrel management;
o Filling;
o Dumping;
o Inventory and monitoring;
o Sampling;
o Prepping / Swelling;
•  Maintain accurate records;
o Daily logs;
o Digital records;
•  Inventory;
o Finished goods,
o Raw goods,
o Production supplies,
•  Oversee bottling;
o Spirit prep/proofing/filtering,
o Bottling line set up/cleaning/breakdown,
o Coordinate labor with temporary agency and supervise team during bottling.
•  Warehouse Management;
o Cleaning, organizing,
o Prepare customer orders for shipping.
o Create BOL’s for shipments
•  Schedule or perform regular maintenance and cleaning of distillery and equipment;
o Work with COO to address all maintenance issues quickly.
•  Attend meetings and off-site events as required;
•  Grain – Receive grain trucks of corn, rye, barley; ensuring proper quality prior to acceptance;
•  Milling – ensuring proper grind size and quantity for each grain type and recipe,
•  Mashing – operate the cooker to produce a consistent, quality mash;
•  Distilling – operate column still with two doublers and operate pot still;
•  Cleaning and sanitizing - all equipment and production work spaces

KNOWLEDGE, SKILLS & OTHER ABILITIES:
•  Must have a true passion for, and a detailed understanding of distillation. Must be able to demonstrate extensive knowledge of spirits and the distillation process;
•  Minimum 5-7 Years prior distilling management experience;
•  Prior experience with distilling systems software;
•  Strong analytical, computer and math skills;
o Computer skills required: Google Sheets or Excel/Word/Outlook proficiency highly desirable.
•  Ability to stand for long periods of time;
•  Ability to take direction yet work autonomously;
•  Intellectual curiosity to learn more about your position, the spirit making process, and how to improve each step.

EDUCATION:
•  Prefer degree/certification in related field or equivalent experience of at least ten years.

PHYSICAL & ENVIRONMENTAL DEMANDS:
•  Ability to be on feet for up to 75% of the prescribed shift.
•  Ability to lift 50 pounds, able to stand, bend, stoop, twist and turn for prolonged periods of time.
•  The position will require working inside and outside various times of the year and may require prolonged exposure to heat and humidity.
•  Be willing to travel as necessary to manage future distilling facilities as well as our procurement supply chain.
